We are having our first non-baking workshop HOW TO BUILD A COB OVEN with Simon Blackwell

A cob oven is a simple, hand-made, wood-fired oven that can be made by anyone. Join us and learn how to build your own outdoor oven using “cob” a natural building material made by mixing clay, straw, water and subsoil with your feet. In this workshop we will go through practical steps involved in building an outdoor oven. By the end of the course you will have the skills and confidence to go away and build your own!

Simon is passionate about traditional cob ovens and their potential for encouraging community involvement. He builds cob ovens, benches, hot tubs and sweat lodges, and holds workshops and courses in cob oven building and baking and pizza making. Since appearing on “The Great British Bake Off” Simon has been combining his love of baking with his passion for sustainable building, in particular by teaching people how to build their own Cob ovens.

Using sourdough culture is an ancient way of making bread. Come to learn the basics of this wonderful technique to bake incredibly nutritious and tasty loaves. You will learn to make sourdough starters and sponges and experiment with different doughs. By the end of the workshop your own handmade sourdough loaf will be ready to take home together with your own starter for future baking, recipes and a handful of new skills.

Flour, water, yeast and salt. The magic ingredients for a good loaf of nutritious bread.

This session is for those of you who want to learn the very basics of bread baking or who need a little help with your confidence as bakers or some reassurance for what you’re already doing.

We will be baking a wholewheat loaf (or spelt if you have intolerance). While we wait for the dough to rise we will experiment with different doughs, we’ll tell bread stories and you’ll have a chance to grind your own flour with our stone mill. By the end of the workshop you will receive your own handmade loaf, some other treats and basic recipes from the Hornbeam Bakers’ Collective to carry on your baking journey.

We will be using only gluten free flours (such as buckwheat, rice, chestnut, millet, quinoa, tapioca, potato and lentil flours) to create baked goods, learning how to work with these flours a little differently than we would with wheat.

We will be making a basic loaf, pizza and sweet, naughty and nice treats.

This course is perfect for people who have intolerances or allergies to gluten, those who want to reduce their intake of wheat and use varied grains or learn how to bake for their intolerant friends. This will also be a great opportunity to meet others with similar diets and share ideas and recipes.

We will use both organic yeast, naturally fermented yeast (starter cultures) and non-yeast recipes. We will also use alternatives to sugar and dairy.

This course is perfect for people who have intolerances to wheat or gluten, those who want to reduce their intake of wheat and use varied grains or learn how to bake for their intolerant friends.

We will use both organic yeast and naturally fermented yeast (starter cultures), though this workshop focuses on variety of flours rather than sourdough baking.

Diversity & Privilege: Building resilient groups based on true equality with Pilar –  Sat 16th nov

Venue tbc 11 till 4. £30 *No one turned away for lack of funds

Most of us are conscious of the deep crisis our societies and our world as a whole are immersed in; most of us want to do something about it and for that we need to pull together; working in groups can be a deeply rewarding experience and also can be challenging and demanding; we often find ourselves full of good intentions and replicating the destructive patterns we have inherited and internalised. This unconscious behaviour can get on the way of us creating truly diverse, fair and equal groups that can effectively work for social change.

This workshop aims to bringing some new understandings and awareness around those patterns; we don’t usually feel comfortable looking at issues of power and privilege so we are offering a warm and gentle space where these questions can begin to be explored.

We will be sharing experiences, doing exercises, listening to poetry, learning how we can support each other and how we can move forwards with an honest and open heart.

Do you have an allergy, intolerance or just prefer healthy eating? Do you want to learn some methods, techniques, ingredients and recipes in special/alternative diets baking?

This type of baking can seem complicated so why not learn from someone who has good knowledge and experience.

This workshop will cover bread, cakes and cookies. We will be working with a variety of non-wheat, non-gluten, vegan/dairy/egg free and sugar free ingredients such as spelt, rice, buckwheat, corn, nut flours and natural sweeteners, thickeners and binding agents. Any specific requests are welcomed. A basic knowledge in baking is preferred for this workshop as well as enthusiasm to experiment!
