Baking a Loaf with Pilar Sun 7th July

Flour, water, yeast and salt. The magic ingredients for a good loaf of nutritious bread. This session is for those of you who want to learn the very basics of bread baking or who need a little help with your confidence as bakers or some reassurance for what you’re already doing.
We will be baking a wholewheat loaf (or spelt if you have intolerance). While we wait for the dough to rise we will experiment with different doughs, we’ll tell bread stories and you’ll have a chance to grind your own flour with our stone mill. By the end of the workshop you will receive your own handmade loaf, some other treats and basic recipes from the Hornbeam Bakers’ Collective to carry on your baking journey.

Shaping Breads with Raju: Sun 21th July

Shaping Breads

11-4pm Cost £30  Booking essential

Do you want to learn the basic, intermediate and more advanced fundamental techniques and styles of shaping dough to create beautiful bread? We will be learning:

  • Pre and final shaping techs such as rounding, pulling and rolling.
  • Different styles of shaping such as rolls, batards, Kaiser, Epi, Plaiting/braiding..
  • Cutting and scoring techniques for final baking

By the end of the workshop you will receive various shaped breads to keep or share and some valuable skills to take away with you for the next time!

Alternative Baking – Gluten Free with Raju Sun 28th July

Gluten Free Loaves

VENUE: HORNBEAM CAFE – 458 Hoe St  London, Greater London E17 9AH

11-4pm £30 Booking essential.

We will be using only gluten free flours (such as buckwheat, rice, chestnut, millet, quinoa, tapioca, potato and lentil flours) to create baked goods, learning how to work with these flours a little differently than we would with wheat.

We will be making a basic loaf, pizza and sweet, naughty and nice treats.

This course is perfect for people who have intolerances or allergies to gluten, those who want to reduce their intake of wheat and use varied grains or learn how to bake for their intolerant friends. This will also be a great opportunity to meet others with similar diets and share ideas and recipes.

We will use both organic yeast, naturally fermented yeast (starter cultures) and non-yeast recipes. We will also use alternatives to sugar and dairy.

Making Pizza with Raju: Sun 4th Aug

11-2pm £15 Booking essential.

We will make nutritious and tasty pizza from scratch making a homemade special sauce together and our own individual doughs, which we will decorate with our favourite toppings. YUM!

All ages workshop, families encouraged, special diets will be catered for. Please bring specific toppings if you require them.

Alternative Breads

We will be using ancient grain spelt, rye and gluten free flours (such as buckwheat, rice, chestnut, millet, quinoa, tapioca, potato and lentil flours) to create breads using alternatives to cultivated common wheat, learning how to work with these flours a little differently than we would with wheat. This course is perfect for people who have intolerances to wheat or gluten, those who want to reduce their intake of wheat and use varied grains or learn how to bake for their intolerant friends.

We will use both organic yeast and naturally fermented yeast (starter cultures), though this workshop focuses on variety of flours rather than sourdough baking.

Speciality Breads with Raju Sun 15th September

VENUE: HORNBEAM CAFE – 458 Hoe St  London, Greater London E17 9AH

11-4pm £30 Booking essential. Learn how to create baguettes, ciabatta and focaccia for yourselves! These speciality breads are popular and a delight to bake and eat.  A basic knowledge of bread making is required for this workshop. We will be using pre-ferments and slap and fold methods as well as learning specific shaping techniques.
