Baking Workshops April – June 2013

Learn how to Bake Bread in 1-5 Sessions! – with Raju: Sats and Suns 24th March – 28th April (see separate post below for more details)

VENUE: MADE IN HACKNEY – 3 Cazenove Road, Stoke Newington London, N16 6PA

Over 5 sessions, starting from basic, progressing to intermediate and advanced, we will learn how to bake bread in many styles and techniques. Learning about key ingredients and stages, how to make basic loaves to baguettes and sourdoughs, various kneading, shaping and scoring techniques, using wheat and alternative non wheat flours with/out yeast and starter cultures to create beautiful organic wholesome bread! Over the weeks you will develop enough skills and knowledge but also useful experience to be able to bake your own bread! You will be working in a small group with instructional and practical hands-on learning. All materials and equipment are provided.

ONLY £200 for 5 sessions or £45 for each individual session.

Alternative Breads with Raju: Sun 7th April & Sun 16th June (new date added)

VENUE: HORNBEAM CAFE – 458 Hoe St  London, Greater London E17 9AH

11-4pm £30 Booking essential.

We will be using ancient grain spelt, rye and gluten free flours (such as buckwheat, rice, chestnut, millet, quinoa, tapioca, potato and lentil flours) to create breads using alternatives to cultivated common wheat, learning how to work with these flours a little differently than we would with wheat. This course is perfect for people who have intolerances to wheat but not to gluten, or want to reduce their intake of wheat and use varied grains. though participants who are gluten intolerant are also welcome to join and focus only on GF breads in the workshop. This workshop can also be commercial yeast free (just email us to let us know if you would like that option)

Sourdough Baking 1 with Simon and David Sun 21st April, 28th April, 9th June and 23nd June

11-4pm Cost  £25 Booking essential. Using sourdough culture is an ancient way of making bread. Come to learn the basics of this wonderful technique to bake incredibly nutritious and tasty loaves. You will learn to make sourdough starters and sponges and experiment with different doughs. By the end of the workshop your own handmade sourdough loaf will be ready to take home together with your own starter for future baking, recipes and a handful of new skills.

Baking a Loaf with Pilar Sun 19th May

VENUE: HORNBEAM CAFE – 458 Hoe St  London, Greater London E17 9AH

11-4pm Cost £25  Booking essential (no one turned away for lack of funds)

Flour, water, yeast and salt. The magic ingredients for a good loaf of nutritious bread. This session is for those of you who want to learn the very basics of bread baking or who need a little help with your confidence as bakers or some reassurance for what you’re already doing.
We will be baking a wholewheat loaf (or spelt if you have intolerance). While we wait for the dough to rise we will experiment with different doughs, we’ll tell bread stories and you’ll have a chance to grind your own flour with our stone mill. By the end of the workshop you will receive your own handmade loaf, some other treats and basic recipes from the Hornbeam Bakers’ Collective to carry on your baking journey.

Sourdough Baking 2 with Simon and David Sun 26th May

VENUE: HORNBEAM CAFE – 458 Hoe St  London, Greater London E17 9AH

11-4pm Cost £25 Booking essential. For people who have done Sourdough Baking 1 or with some experience in sourdough baking, this session will provide a deeper understanding of the technique, teach how to convert any recipe into a sourdough recipe and experiment further with different flours to make starters and loaves. You will take your own sourdough freshly baked bread with you, more recipes, tips, skills and the confidence to keep going!

Speciality Breads with Raju Sun 30th June (new course added)

11-4pm £30 Booking essential. Learn how to create baguettes, ciabatta and focaccia for yourselves! These speciality breads are popular and a delight to bake and eat.  A basic knowledge of bread making is required for this workshop.
